Watermelon Mint Prosecco Popsicles

Watermelon Mint Prosecco Popsicles

The sweet watermelon with mint which makes this both sweet and refreshing.Ā Karen

  • 1 unseeded watermelon, cut into pieces.<br /><br />
  • 1 handful of mint leaves<br /><br />
  • Sugar, optional<br /><br />
  • 1 bottle Cold Prosecco<br /><br />
  1. In a blender, blend the watermelon chunks and blend until completely pureed and watery. Add the handful of mint leaves and blend until mint has disappeared. Taste with a spoon and add more mint if you like more or sweeten with sugar or honey if you like a sweeter popsicle. Keep adding and blending to taste.

  2. Strain the watermelon juice through a fine mesh strainer. Do this in batches if you need to and discard the fiber/foam.

  3. Pour the juice into popsicle molds. If some foam develops on top use a popsicle stick to remove or deflate the foam. There shouldn’t be a lot.

  4. Place the cap on the molds and freeze. After about 2-3 hours, stick the popsicle sticks into the molds. By allowing the popsicles to par-freeze the sticks will stay in place and be even.

  5. Freeze overnight.

  6. Serve in wine glasses and pour cold prosecco over.

This watermelon mint lime juice is an instant summer cool down refresher! Julie Wampler

  • 5-6 cups cubed seedless watermelon<br /><br />
  • Juice of 2 limes<br /><br />
  • Handful of mint leaves<br /><br />
  1. Place everything in a blender and blend until smooth.

  2. If desired, strain juice over fine mesh sieve and large bowl. Press through until just juice is in the bowl and the pulp remains in the sieve.

  3. Pour into jars and store in the refrigerator for up to five days.

Violet Sorbet

Violet is a delicate and beautiful flavor. In this recipe, violets infuse the sorbet for a very special dessert treat.

  • 2 small bowls filled with violet flowers<br /><br />
  • 1 Ā bowl of water<br /><br />
  • 3/4 bowl of fine sugar<br /><br />
  • 1 lemon, juiced<br /><br />
  1. Bring the water to a boil.Ā Remove from the heat and toss all but a handful of the violet flowers into it.

  2. Add several dashes of fresh lemon juice.

  3. Cover the bowl and allow the violets to infuse for a minimum of 2 hours.Ā Longer is better.

  4. Quickly mix the infused mixture with a handheld mixer.

  5. Add the sugar to the mix.Ā Cover it for at least an hour. During this time, stir it once or twice so that the sugar isn't sinking to the bottom.

  6. Heat the mixture over low heat gently until the sugar completely dissolves.

  7. Remove from the heat and drain the flowers.


  8. Add the remaining handful of lightly chopped violet flowers to the cooled down mixture.
    Ā Mix through.

  9. Add the mixture to an ice cream or sorbet maker.Ā Make the sorbet according to the machine's instructions.

  10. Serve the sorbet.Ā It goes well with violet sugar and crystallized violets sprinkled over the top of each serve.

Refreshing Cocktail for Summer – Teffy Perk

  • 1/2 large watermelon<br /><br />
  • 6 limes<br /><br />
  • 200 ml tequila (blanco)<br /><br />
  • 500 ml Prosecco<br /><br />
  • 6 sprigs of mint, plus extra to garnish<br /><br />
  • Ice<br /><br />
  1. Scoop your watermelon flesh into a blender puree until smooth, straining through a fine mesh sieve into a large jug. Note – you might have to do this in batches.

  2. Squeeze in the juice of 3 limes, and slice the remaining limes into thin rounds before stirring them into the jug.

  3. Stir in the tequila, Prosseco, mint, and ice.

  4. Top with the mint leaves and serve.

For a pitcher:<br /><br />

  • 2 tbsp granulated sugar<br /><br />
  • 2 limes, juiced (about 1/4 cup)<br /><br />
  • 1 lb fresh strawberries<br /><br />
  • 2 cups gin<br /><br />
  • 3 cups club soda<br /><br />
  • Fresh mint sprigs, for garnish

For a single drink:<br /><br />

  • 1/2 tsp granulated sugar<br /><br />
  • 1 lime wedge<br /><br />
  • 3 fresh strawberries, 2 hulled and sliced and 1 reserved for garnish<br /><br />
  • 3 oz gin<br /><br />
  • Club soda
  • Fresh mint sprig, for garnish

For a pitcher:<br /><br />

  1. Muddle the sugar and limes in a pitcher that holds at least 8 cups (64 ounces). Set aside 6 to 8 small strawberries and make a small slice in their tips. Hull and slice the remaining strawberries and muddle the slices lightly with the sugar and lime juice.

  2. Stir in the gin and club soda and pack the pitcher full of ice. Add mint sprigs to garnish. Pour into ice-filled glasses and garnish with a strawberry, slotted onto the edge of the glass.

For a single drink:<br /><br />

  1. In a tall glass, combine the sugar and a squeeze of juice from the lime wedge. Muddle with the back of a spoon to dissolve the sugar. Add the sliced strawberries and lightly muddle.

  2. Fill the glass with ice and add the gin. Top with a splash of club soda and garnish with the last strawberry and a sprig of mint.

You can make this pitcher ahead; mix everything except the club soda and ice, then refrigerate overnight. A night in the fridge will also help the strawberries add more flavor and color to the drink.

  • 4 cups cupsĀ ice<br /><br />
  • 3 cups diced frozen watermelon<br /><br />
  • 3 cups frozen strawberries<br /><br />
  • 1 bottle Sparkling Ice Strawberry Watermelon Naturally Flavored Sparkling Water<br /><br />
  • Vodka to taste<br /><br />
  • Optional for garnish: strawberries and watermelon<br /><br />
  1. In a blender pulse the ice to crush it. Add watermelon and pulse again. Add strawberries and pulse again. Keep pulsing until everything crushes nicely.

  2. Add the Sparkling Ice and vodka, pulse or mix to combine.

  3. Pour into chilled glasses. Garnish with fruit if you desire.

  4. Serve with a big old slushie loving smile!
