Bistecca Fiorentina

A recipe that epitomizes the rustic simplicity of Tuscan cuisine, bistecca fiorentina, or Italian-style T-bone steak, is perfect for sharing. Chowhound

  • 3 pounds porterhouse steak (2 1/2 to 3 inches thick)
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tsp coarsely freshly ground black pepper
  • 2-3 large onions, cut into 1-inch chunks
  • A few handfuls (about 3 to 4 ounces) arugula
  • Chianti Butter, for garnish
  1. Brush steak with olive oil, season well with salt and pepper, and let sit, uncovered, at room temperature for 30 minutes. Position one oven rack in the top third of the oven, a second rack in the bottom of the oven, and heat to 500°F (not on broil).
  2. Fill a 13-by-9-inch baking dish with enough onions to completely cover the bottom. Place the baking dish on the lower rack. Place the steak directly on the top rack, positioned above the dish of onions. Use tongs to turn the steak after 15 minutes, and check periodically to make sure it is not burning. For medium rare, roast until the internal temperature registers 125°F, about 35 to 40 minutes.
  3. Discard onions and place steak on a cutting board to rest for 5 to 10 minutes before serving. To serve, place on a bed of arugula and top with a few slices of Chianti Butter (alternatively, brush on a little high-quality extra-virgin olive oil).

Beverage pairing: A red wine from Tuscany would be delicious with this hearty dish. A Chianti would do the trick, but for something a bit more unusual, try a Rosso di Montalcino (made from Sangiovese), like the 2004 Casisano Colombaio Rosso di Montalcino.

  • 1 cup Pomegranate seeds
  • 2 tsp Fresh Lemon Juice
  • 1 bag bag of Stevia (sugar substitute)
  • 1/4 Black Salt
  • 1 Pinch Black pepper powder
  • 1-1/2 cups Water
  • 4 Ice Cubes
  1. Mill 1 pomegranate seeds and ½ cup water in a mixer for 10 seconds;
  2. Take a small glass bowl and pour the pulp through a sieve, while pressing it with a spoon so you will squeeze the pulp juice;
  3. Add a glass of water, fresh lemon juice, Stevia and black salt. Mix well so the ingredients merge.

  4. Add Black pepper powder if you wish more pronounced taste and aroma;
  5. Add two cubes of ice in the glass for a better freshening effect.

This apricot ginger Bellini brings a long-needed upgrade to the traditional OJ and champagne brunch beverage. Platings and Pairings

  • 1 cup Sugar
  • 1 cup water
  • 4 apricots pitted and chopped
  • 1 inch piece of ginger peeled and sliced
  • 1 bottle sparkling wine or 1 bottle champagne chilled, 750, 750 ml
  1. In a medium saucepan, stir together water, sugar, ginger, and apricots. Bring mixture to a boil, then reduce heat and let mixture simmer until sugar is completely dissolves. Remove from heat, cover and let steep for 15 minutes.

    Strain ginger and apricots from syrup mixture and let cool completely.

    Assemble the bellinis by adding the sparkling wine to a champagne flute, filling halfway, top off with the ginger-apricot simple syrup.

    NOTE: Store any remaining simple syrup in the fridge. It will keep for about a week.
