Ingredients
1/2cupwater
1/2cupsugar
1pintripe strawberries
2/3cupchampagne
Instructions
Place the sugar and water in a small saucepan over medium heat.
Stir the water until the sugar has completely dissolved. Turn off the heat. Dissolving the sugar has created a syrup, which will ensure that the popsicles have a smooth texture.
Remove the green tops from the strawberries.
Puree your strawberries in a blender until they are completely smooth.
Stir the sugar syrup, strawberries, and champagne. Use a whisk to ensure that the ingredients are completely mixed.
Fill your popsicle molds and freeze the mixture until it is completely solid. This will probably take at least two hours.
Unmold and enjoy, so long as you are over 21 years old!
Notes
If strawberries aren't in season, use frozen strawberries for this recipe. Defrost them so that you can puree and mix them with the other ingredients, but otherwise, they are every bit as good.
The recipe doesn’t call for straining the puree, but if you don’t want the seeds in your final product, run it through a sieve. Alternatively, leave your strawberries a little rougher and keep some pea-sized pieces of strawberries. These will be delicious once your Popsicles freeze.
